Quinoa porridge

Quick, quirky quinoa for those Monday morning blues!

Who isn’t sick of an oatmeal or cereal breakfast every morning? It’s time to try quinoa instead! This ancient grain is a complete protein that contains all of the nine amino acids that our body needs but can’t make. Quinoa is a delicious super-food that perfectly kick starts your day while helping you fit into those skinny jeans.

Fight those horrible Monday morning blues with a sumptuous bowl of healthy, calorie-friendly and mouth watering bowl of quinoa and blueberry porridge.

What will I need?

1.5 cups almond milk

1 cup uncooked quinoa
1 cup water
2 teaspoons granulated sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
1 cup fresh blueberries
4 tablespoons chopped roasted almonds

And how do I make it?

Stir together the almond milk, water, uncooked quinoa, granulated sugar, ground cinnamon and salt in a saucepan and bring to a boil over medium heat. Cover and reduce the heat to medium-low and simmer for 15 minutes or until all the liquid is absorbed. Spoon into bowls and top each one with blueberries (as many as you like!). Garnish with chopped almonds and savour a heavenly bowl of porridge.
