Greek summer salad

Summer in a bowl!

If you’re looking for a cool and refreshing salad recipe for this summer, look no further. This Greek favourite is light and flavourful and can be served as a side dish at a BBQ or as a healthy lunch. It’s a winner all the way!

The salty feta, sweet watermelon and cool mint create a perfect flavour balance. This super simple and easy to prepare dish will leave your guests asking for more!

What will I need?

1/2 cucumber, cut into cubes

1 small red onion, thinly sliced
1/2 small watermelon, peeled, deseeded and cut into 2cm cubes
200g feta (or ricotta) cheese, crumbled
50g black olives, halved
2 tbsp chopped fresh mint
4tbsp extra-virgin olive oil
Juice of half a lemon
Salt and freshly ground black pepper

How is it done?

Combine the cucumber, watermelon, olives and feta cheese in a bowl. For the dressing, mix the thinly sliced onion with the extra-virgin olive oil and lemon juice. Set aside this mixture for 10 minutes. Add the dressing and season with salt and pepper. Garnish with fresh mint and serve or refrigerate until ready to eat.
