Classic Indian tomato soup

Soup for the soul!

Everyone loves good old fashioned tomato soup on a rainy day. Thankfully, not all soups take hours to make. This yummy tomato basil soup is pure comfort food and is so simple to prepare that you probably have all the ingredients on hand.

This classic soup is a hit with kids as well as adults and will have everyone wanting seconds! And of course, no tomato soup would ever be complete without a grilled cheese sandwich.

What will I need?

5-6 medium tomatoes

2 tbsp olive oil
2 medium onions
½ tsp cumin seeds
3-4 garlic cloves
Black pepper
Salt to taste
4 bread slices
Fresh basil leaves

How is it done?

Chop the onions and tomatoes roughly and crush the garlic. Heat a pressure cooker and sauté the cumin seeds, onions and garlic. Add the chopped tomatoes and stir well. To this, add salt and pepper to taste. Next, pour in 2-3 cups of water and allow this mixture to cook in the pressure cooker for about 3 whistles. Then transfer the contents of the pressure cooker to a blender jar and allow them to cool for a while. Once cool, add trimmed bread slices and basil leaves to the blender jar and blend everything well. Heat the blended soup and garnish with fresh basil leaves.
