The culinarily challenged person’s guide to a healthy breakfast
Yes, eggs are perfect because other than the cup of coffee and those instant noodles, eggs are your perpetual hunger saviours. We get it. Just like some of us, you are culinarily challenged and you are capable of burning the house down when all you wanted to do was make a sandwich. Fret not. What will I need?
1 cup chopped broccoli
2 large eggs, beaten
2 tablespoons of feta cheese, crumbled
1/4 teaspoon dried dill
2 slices rye bread, toasted
How is it done?
Heat a nonstick skillet over medium heat and coat the pan with oil (as little as possible if those pants seem to be shrinking!). Combine beaten eggs, feta, broccoli and dill in a small bowl. Pour egg mixture on the pan. Cook for 3 minutes and flip. Serve with toasted bread.
